The clay surface and movement within the vessel micro-oxygenate the wine, helping speed up its maturation, rounding out the tannins, resulting in a full-bodied wine with remarkable drinkability and freshness. Situated about 45 mins inland from the sea, the climate here is Mediterranean – mild in winter with only occasional snow and hot in summer, though the breeze from the sea comes around midday to cool the vineyard down, ensuring temperatures don't soar and the grapes don't bake.
Soil here is calcareous – high in limestone with a lot of broken quartz stone and pebbles. The grapes are de-stemmed, pressed and left to macerate on skin for 12 days. Fermentation takes place in stainless steel tanks before the wine is passed to clay amphora, from Padilla in Villerobledos, where it rests for 13 months.
